If I had to choose a favourite fruit, peaches would be one near the top of the list (but please don’t make me choose!). They seem to be everywhere this time of year: the farmer’s market, the grocery store, fruit stands and they’re juicy and delicious. I’ve been snacking on them nonstop and then had the idea to make a healthy peach crisp – one that could be eaten for breakfast (with yogurt) or for a dessert/snack (with ice cream or frozen yogurt).
And it turned out perfectly so I had to share!
Ingredients
Crisp Topping
- 1 cup rolled oats
- 1/2 cup almond flour
- 1/4 cup chopped walnuts (optional)
- 1/3 cup brown sugar
- 1 tsp cinnamon
- 1/4 teaspoon salt
- 1/4 cup melted coconut oil or butter
Peach Filling
- 6 peaches: peeled, pitted and cut into 1/4-1/2 inch slices
- 3 tablespoons maple syrup
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 3 tablespoons cornstarch
Instructions
- Preheat your oven to 350 F. Combine the oats, almond flour, walnuts, brown sugar, cinnamon, and salt. Then pour in the melted coconut oil and combine everything until a crumble forms.
- In a large bowl, combine the filling ingredients and mix together until you can no longer see the cornstarch. Pour the filling into a 9×9 inch baking dish or a 10 inch cast iron skillet. Spread the topping evenly over the peach and place on the middle rack of the oven.
- Bake for 25-30 minutes or until the top is golden brown and the filling is bubbling. Allow to cool for 5-10 minutes before serving. Serve topped with vanilla ice cream or greek yogurt. Voila! A healthy peach crisp for you to enjoy!
