Description
Fresh peach & prosciutto salad with mozzarella (or burrata) — a sweet, salty, creamy summer salad that’s ready in 10 minutes.
Ingredients
Scale
For the salad:
- 2 peaches, thinly sliced
- 6-8 slices prosciutto, torn
- 4 cups arugula
- 8 oz fresh mozzarella (or burrata)
- 1/4 cup slivered almonds (or toasted pine nuts)
For the dressing:
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey
- 1 tsp dijon mustard
- Fresh basil, salt, pepper (optional)
Instructions
- Arrange arugula on a serving platter
- Layer peach slices and prosciutto over the greens.
- Tear mozzarella into pieces and scatter over the top (or place burrata in center and tear before serving).
- Sprinkle slivered almonds.
- Combine all of the dressing ingredients in a small jar then drizzle over top of the ingredients on the prepared platter.
- Season with basil, salt, and pepper. Serve immediately.
