Pumpkin Spice Syrup
- 1 cup water
- ½ cup granulated sugar
- ½ cup brown sugar
- 6 Tbsp pumpkin purée
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
Pumpkin Spice Cold Foam
- 4 oz 2% milk (or your milk of choice)
- 1 ½ Tbsp pumpkin spice syrup (from above)
Instructions
Make the Pumpkin Spice Syrup
- Combine water, granulated sugar, brown sugar, pumpkin purée, vanilla extract, and pumpkin pie spice in a small saucepan.
- Bring to a gentle simmer and cook for about 4 minutes, stirring until the sugars are fully dissolved.
- Strain through a fine mesh strainer into a jar or airtight container. Store in the fridge for up to 2 weeks.
Make the Pumpkin Spice Cold Foam
- Add milk and pumpkin spice syrup to a frother (or use a jar with a lid and shake vigorously, or a handheld frother).
- Froth until light and fluffy.
- Pour over iced coffee, cold brew, or your favourite latte.
- Optional: sprinkle a pinch of cinnamon or pumpkin pie spice on top before serving.
