I’ve gone back and forth on how to best incorporate my love of food, meal planning and cooking onto my platforms. I’m not a food blogger, but I am a blogger who shares things I love and that are a part of our lifestyle and food definitely makes the cut. I enjoy the ritual of searching for recipes to try for each week’s meal plan, making lists for groceries and then spending time in the kitchen bringing that dish to life.
After a lot of thought, I’ve decided to start sharing meal plans on my blog. I haven’t decided if I’ll do this once or twice a month but am open to either if you find it helpful! These posts will include a meal plan with recipes for dinner, something to bake and something to sip. They’ll also include links to these recipes that I’ve discovered in my own searches.
To Cook
20 Minute Honey Garlic Cashew Chicken and Coconut Noodles
In my opinion, Teighan from Half Baked Harvest is the queen of the kitchen. You will probably see a recipe or two from her on these meal plans most week’s because about 50% of what I make is from her cookbooks or her website. We made this recipe last week and it was quick to make and tasted great. I would venture to say that the leftovers the next day were actually better than the first day – I think the flavours really came together well on day 2.
Vegan Crunchwrap Extreme
We made this the other night and it was delicious. When we made it, I swapped the tofu out for ground turkey and rather than make my own queso, I bought the vegan queso from Costco and it worked well. This recipe is simple and feels indulgent. I think kiddos would love this one too – it really does feel like “fast food” except has fresh ingredients.
Greek Chicken Orzo Power Bowls
Lately, I’ve been so into any Mediterranean food. It all just tastes so fresh and I think the beginning of spring is having my crave this style of food. I’m also obsessed with orzo and feta so this recipe really hit the spot for me. If you’re craving more veggies in your meals as of late, give this one a try!
Honey Sriracha Glazed Meatballs
This recipe is a regular in the rotation here at the Crawford house. It’s easy to make and is the perfect week-night dinner to whip up. The meatballs are the perfect balance of sweet with kick from the sriracha and the leftovers are delicious too. I usually just pair this with rice and a veggie or two (raw cucumbers, blanched green beans, sautéed zucchini would all be great options). Do yourself a favour and add this one to your menu for the week!
To Bake
Blackberry Cinnamon Swirl Oatmeal Muffins
Admittedly, I’m not much of a baker. I find the precision needing in baking to be a bit stressful but I do love baked goods. So I’m pushing myself in the kitchen a bit to try out recipes and this one wasn’t too tough! It did require a bit of time, as there were a few different steps in the process but nothing was overly difficult and I think they came out well!
To Sip
Cucumber Ginger Gin Fizz
This cocktail recipe is the only thing on this week’s meal plan that I haven’t yet made. But you best believe I will be adding this to the happy hour rotation in the near future. This cocktail just screams “refreshing” to me. Cucumber and ginger are a deadly duo and once you add the gin in there, unstoppable. Can’t wait to give this one a try!
